You draw the outline, the tool keeps what is inside it and makes everything else transparent. No model deciding what the subject is, which means no surprise when it decides wrong — on hair, on glass, on a product photographed against a background the same colour as itself.
For anything rectangular the crop tool is faster. This page is for the shapes a rectangle cannot describe: a person cut from a group, a logo lifted off a screenshot, a plant separated from a busy shelf.

A JPG, PNG or WebP photo. Larger files give you more room to trace accurately, and nothing is uploaded, so there is no reason to shrink first.
Press and drag around the subject, then release. Trace slightly inside the edge rather than outside it — a sliver of background is far more visible on the final composite than a sliver of missing subject.
Apply cutout closes the path and clears everything outside it. The export is a PNG with real alpha, ready to drop onto another background.

Automatic tools are excellent on a clear subject against a clean background and unreliable everywhere else. Drawing the path yourself takes a minute and gives a predictable result, and your photo never leaves the device.
Draw again before applying, or reload the original and start over. There is no destructive step until you apply.
You will not, with a lasso — soft edges need a mask with partial transparency, which this tool does not produce. Trace inside the hairline and accept a hard edge, or pick a photo with a simpler outline.
